We have become sap heads.

Last weekend we went to a local Nature Center and they were having their "Maple Syrup Days." We had some friends from PA come with us and took a tour of the process of making syrup. They took us out to the woods and showed us how we could tap trees and collect the sap. They then took us to see how the sap was boiled, they had how the Indians boiled down the sap, to modern day sugar shacks...very interesting and we got hooked. So for the last week we have been collecting sap and boiling it down.

This is what happens when you become a bunch of sap heads, we have trees tapped in our backyard and are using milk jugs to collect the sap.

This is our first batch, we got more than 3 gallons of sap.

Finally, it looks something like syrup...lots of boiling down...good thing that our house is dry, so the humidity is a good thing. And if you haven't smelled the vapor from maple syrup, well you are missing out...it is awesome.

All of that boiling for this 2 pint jar.

So this was our supper tonight, with fresh syrup...YUM!!!
